Simbithi Country Club has an exciting opportunity for an additional Sous Chef to join the team. The successful candidate will be responsible for food production and would assume the role of Executive Chef in his absence, thereby ensuring that food is served at the highest standard and actively drives the turnaround times for orders placed, meal preparation and presentation to the customer, to ensure both efficient service and quality meals.
Duties and Responsibilities
Ensure appropriate dress code of staff in line in with health and safety requirements
Management of kitchen staff, which includes Junior Sous Chefs, Chef de Parties, Demi Chef de
Parties, and Scullers
Menu, Design and Development. Ensure that recipes are followed to maintain high quality meals at all times
Monitors the bump screen to check on times of order placed and ensure that meals are presented in good turnaround times
Ensures that standard portioning is applied
Ensure that kitchen stock is well maintained, stored at appropriate areas and rotated to ensure
Inspect and clean food preparation areas, such as equipment and work surfaces, to ensure safe and sanitary food-handling practices and ensure conformance to established standards.
Inspect kitchen stock- all food, spices, etc. Recommendations to defrost freezers as and when required. Ensure all kitchen stock is well maintained, packaged and allocated to the correct area- shelves, freezers etc. Ensures stock rotation and ensure expired food is disposed of and classified as waste.
Ensures presentation of orders are in line with Company standards
Reports any operational problems (faulty/damaged equipment) that could hinder daily
Assisting of reporting of all kitchen stock items. Account for kitchen stock variances. Complete kitchen stock reconciliations. Ensure that stock par levels are maintained.
Ensures that all wastages and breakages in the kitchen are disclosed and accounted for
Ensure the kitchen area is well maintained, that the kitchen is clean and tidy at all times
Staff Discipline and any other ad hoc duties that might be required in line with the job
5 years relevant experience
Diploma in Food Preparation and Cooking (Culinary Arts)
Self-Motivated and displays a Calm & Courteous demeanour to customers
Excellent Communication and Organisational Skills
